10 ways with avocado toast

Ten creative ways to jazz up your avocado toast! A delicous and easy breakfast to start your busy day. And plus the avo will help keep you full!

I’m such a sucker for a good avocado toast! It’s the easiest homemade breakky that makes you feel like you’re brunching at a cafe. As a bonus, the good fats in the avo help keep you full for long periods of time (which is why I think it’s a great breakfast idea for dancers before rehearsal or class). If you’re getting a little bored with just the usual avo on toast here are 10 ways to mix things up:

  1. ‘The Aussie’: Spread toast with Vegemite before topping with avocado. The saltiness of the spread and the creaminess of the avo are a match made in heaven. 
  2. ‘The Melbourne cafe’: Top your toast with avo, goats cheese, chilli flakes, pumpkin seeds and a squeeze of lime to finish. You couldn’t get more Melbourne millennial if you tried. 
  3. ‘The Christmas leftovers’: Top your toast with avocado and then place sliced ham on top. Preferably the thick kind that you eat wayyyyy too much of around Christmas time. 
  4. ‘70s style’: My mum and dad are always telling me that back when they were young they used to eat avocado straight from its skin, with vinegar, salt and pepper. Boy, was it a game changer when I actually tried it. This is just that, but on toast! Top your toast with avocado and drizzle with vinegar (balsamic or white vinegar) and then a dust of salt and pepper to finish. So delish. 
  5. ‘Summer time salad on toast’: One of my favourite salads during summer has always been a mango and avocado one. So why not put it on bread and have it for breakky?! Top your toast with avocado, grilled halloumi and a few mango pieces. The sweetness, mixed with salty, mixed with creamy is such a surprisingly good combo. 
  6. ‘Things will get feta’: Please excuse my feta pun, I just couldn’t help myself. Top your toast with avo, tomato slices and crumbled feta – it’s a classic for a reason. 
  7. ‘All aboard’: Top your avo toast with good smoked salmon and lemon. It tastes very soFISHticated…. okay, okay, I’ll stop with the puns now.  
  8. ‘Say cheeeeeese!’: Top you’re toast with avo and saganaki, with a drizzle of lemon. This one is great for weekends because it feels super decadent. And plus saganaki, need I say more?
  9. ‘The one with the capers’: As you can probably tell I’m running out of creative names. This one is just avo and salty capers. Simple and yum. 
  10. ‘Basil-icious’: I have had a basil obsession for a very long time. I truly believe if you put basil on anything it instantly makes it better. Top your avocado toast with sliced cherry tomatoes, and fresh basil. Smells (and tastes) amazing.
